This is an excellent condiment for grilled fish or chicken.
Mango-Black Bean Salsa

Ingredients
- 1medium fresh mango,peeled and diced
- 1Tbsp. rice wine vinegar
- 1Tbsp. honey
- 1/2tsp. Kosher salt(to taste)
- 15 oz.can black beans,cooked and rinsed
- 1medium plum tomato,small dice
- 1/2cup jicama,small dice
- 1medium red onionminced
- 1/2medium green bell pepperminced
- 1/2-1 jalapeno,seeded, minced
- 1/2bunch cilantrochopped
Instructions
- Combine all ingredients; mix gently.
- Taste; add salt and / or honey as desired.
- Allow to stand, covered, at least 1 hour before serving. Store covered in refrigerator for up to 2 days.
Recipe Notes
You can substitute Granny Smith apple for the jicama, if you'd like a sweeter salsa.
Try substituting other fruits and peppers (such as papaya and poblanos, for example), for a more unique flavor.
