Mango-Black Bean Salsa

Ingredients
  • 1medium fresh mango,peeled and diced
  • 1Tbsp. rice wine vinegar
  • 1Tbsp. honey
  • 1/2tsp. Kosher salt(to taste)
  • 15 oz.can black beans,cooked and rinsed
  • 1medium plum tomato,small dice
  • 1/2cup jicama,small dice
  • 1medium red onionminced
  • 1/2medium green bell pepperminced
  • 1/2-1 jalapeno,seeded, minced
  • 1/2bunch cilantrochopped
Instructions
  1. Combine all ingredients; mix gently.
  2. Taste; add salt and / or honey as desired.
  3. Allow to stand, covered, at least 1 hour before serving. Store covered in refrigerator for up to 2 days.
Recipe Notes

You can substitute Granny Smith apple for the jicama, if you'd like a sweeter salsa.

Try substituting other fruits and peppers (such as papaya and poblanos, for example), for a more unique flavor.
