Ingredients
  • 1cup heavy cream
  • 2Tbsp. rocoto paste
  • 1/4cup pisco
  • 1/8tsp. salt(to taste)
  • 1pinch white pepper(to taste)
Instructions
  1. Reduce pisco in a small saucepot over medium heat until almost evaporated (about 2-3 minutes).
  2. Add cream and rocoto; bring to a simmer, then reduce heat to low.
  3. Simmer until the sauce thickens to desired consistency (about 5 minutes).
  4. Taste; add salt and white pepper to taste.
